今回はシンプルな配合の型抜きクッキーの作り方をご紹介します。
全卵使用で、バター香るサクサク食感のクッキーです。
お好きな型でぜひ作ってみて下さい♪

【材料】中サイズの抜き型　約30枚分
・食塩不使用バター　50ｇ
・砂糖　40g（お好きなものでOK）
・全卵　15g
・薄力粉　110g
・お好みでトッピング少々（動画ではフルーツ顆粒を使用）

【下準備】
・食塩不使用バターを室温に戻しておく
・砂糖にダマがある場合はふるっておく
・溶き卵を計量し、室温に戻しておく

【作り方】
①室温に戻したバターを泡だて器で軽く混ぜる
※バターが硬い場合は500Wのレンジで5秒ずつ様子を見ながら加熱してください
②砂糖を加えてよく混ぜる
③溶き卵を3回に分けて加え、その都度よく混ぜる
④薄力粉をふるい入れ、ゴムベラで切るように粉っぽさが無くなるまで混ぜる
⑤生地を半分くらいに分け、それぞれラップで包む
⑥冷蔵庫で1時間以上寝かせる
⑦天板にシルパンもしくはクッキングシートを敷いておく
⑧生地を1つ冷蔵庫から取り出し、ラップで挟んで3mmの厚さに伸ばす
※3mm厚のルーラーを使うと均一に伸ばせます。無い場合は4mm程度になりますが割りばしで代用可能です。
⑨伸ばした生地を好きな型で抜く。残った生地は集めて伸ばしなおして冷蔵庫で冷やす。
※模様が細かい型の場合は、型に薄く薄力粉を付けると綺麗に抜きやすいです。
⑩伸ばした残り生地を冷やしている間に、もう一つの生地を伸ばして型抜きする。生地が無くなるまで繰り返す。
⑪型抜き作業が終わる少し前にオーブンを170℃に予熱する。
⑫トッピングする場合は焼く前に好きな具材を乗せる。
⑬170℃に予熱したオーブンで13～15分焼く。お好みの焼き色になったら取り出す。
⑭粗熱が取れるまで天板のまま静置する。
⑮粗熱が取れたらケーキクーラーなどの上で冷ます。完全に冷めたら密封容器などで保管する。

【ポイント】
・バターをレンジで温める場合は、とかしてしまわないように注意してください
・薄力粉を加えた後は生地を練らないで、切るように混ぜてください
・作業時の室温が高いと生地が柔らかくなりやすく、型抜きしにくくなります。抜きにくい場合は作業中でも冷やしなおして下さい。
・保管やラッピングの際は、乾燥材を一緒に入れると食感が長持ちします
