(またお久しで)簡単なご飯のお供「しらすの釘煮(くぎに)」の作り方 #345【兵庫県の郷土料理】
「くぎ煮」とは前動画の広島県と同じく、瀬戸内海に面する兵庫県が発症で、
煮上がる姿が錆び曲がった釘に見える事からそう呼ばれるものです。
本来はイカナゴ(コウナゴ・シンコ)の稚魚を醤油、砂糖、ショウガなどで甘辛く煮た佃煮。
しかしイカナゴの漁期は約1ヵ月ほどと短く(2023年は3月4日～17日)
鮮度の問題もあるため中々手に入らない事があります。
そこで春と秋が旬ですが、ほぼ年中手に入るしらすです。値段も手頃なので今回はこちらを使います。
しらすは生でなく釜揚げの方が匂いも抑えられ、崩れにくく使いやすいです。
みりんはあまり入れないのが主流ですが、照りも出やすい事と現代の味覚に合うため入れています。
山椒は好みですが、粗熱を取ってから混ぜる方が香りが立ちます。
他では白ごまやきざみ大葉などもお勧めです。冷奴に乗せるなどで酒の肴にもなりますね。
あと残ったタレも使えます。生姜をきざんでしばらく水にさらし、酒で伸ばしてざっと煮ると、
魚の味の染みた生姜の佃煮になります。これもご飯を相当消費しますね。
その生姜の佃煮で魚を焼いても面白いです。

◎簡易手順
①.根生姜を千切りにする
②.鍋に調味料と生姜千切りを入れ煮立たせる
③.しらすを入れ再沸騰させ、アクを取ったら蓋して弱火
④.5分ほど経ったら蓋を取り強火で煮る
⑤.煮汁が1/3ぐらいになるまで煮詰め照りを出す
⑥.少し粘りが出たら火から下げ、しらすを汁から引き上げ冷ます
